Ash Gourd Kootu

Ingredients

  • Ash Gourd, cut into 1″ pieces – 500gm
  • Moong Dhal – ½cup
  • Thoor Dhal – ½cup
  • Turmeric powder – 1tsp
  • Green Chili, slit – 2~3nos
  • Dry Red Chili – 2nos
  • Oil – 1tbsp
  • Mustard seed – 1tsp
  • Channa Dhal – 1tsp
  • Urad Dhal – 1tsp
  • Fresh Curry leaves – 1bunch
  • Coriander leaves – 1bunch
  • Coconut, grated – ½cup (optional)
  • Salt – 1tsp (adjust to your taste)

Method

  • Pressure cook ash gourd, moong dhal, thoor dhal, turmeric powder with enough water
  • Heat oil in a pan
  • Add mustard allow it to splutter
  • Add channa dhal, urad dhal, fry until golden brown
  • Add green chili, red chili, curry leaves, fry for a while
  • Add coconut and quickly mix well
  • Add the mixture into cooked dhal
  • Add salt, mix well
  • Serve hot along with roti or rice
