Carrot, Coriander Soup

Ingredients

  • Carrot, randomly chopped – 250gm
  • Fresh Coriander, chopped – 1bunch
  • Vegetable broth – 500ml
  • Salt – 1tsp (adjust to your taste)
  • Pepper, freshly ground – ½tsp

Method

  • Pressure cook carrot along with stems of coriander for 2~3 whistles
  • Blend well and sieve to filer any pieces
  • Add vegetable broth, salt and bring to a boil
  • Sprinkle pepper powder
  • Garnish with coriander leaves
  • Serve hot
