Egg Muffins with mixed Vegetables

Ingredients

  • Egg, beaten – 5~6nos
  • Spinach, chopped – 3tbsp
  • Red Capsicum, diced – 1tbsp
  • Yellow Capsicum, diced – 1tbsp
  • Tomato, diced – 1nos
  • Onion, diced – 1nos
  • Spring Onion, chopped – 2tbsp
  • Green Chili, minced – 2nos
  • Mint, chopped – 1tsp
  • Asparagus – 4nos (optional)
  • Olive oil – 25ml
  • Pepper, powdered – 1tsp
  • Cumin, posdered – 1tsp
  • Salt – 1tsp (adjust to your taste)

Method

  • Mix all cut vegetables, beaten egg, salt, cumin powder, pepper powder
  • Pre-heat oven at 200°C
  • Grease muffin plates with oilve oil
  • Mix rest of oilive oil along with above mix
  • Fill in the mix in each muffin cups
  • Bake for about 20~25min
  • Rest it for a while
  • Serve with ketchup or chili scauce
