French Beans with Coconut Curry

Ingredients

  • French Bens, chopped – 500gm
  • Carrot, chopped – 50gm
  • Coconut, grated – 1cup
  • Green Chili – 4nos (adjust to your spice level)
  • Ginger – 1inch piece
  • Mustard – 1tsp
  • Channa Dhal – 1tsp
  • Urad Dhal – 1tsp
  • Salt – 1tsp (adjust to your taste)
  • Turmeric powder – 1tsp
  • Oil – 1tbsp
  • Fresh Curry leaves – 1bunch

Method

  • Heat oil in a pan
  • Add mustard, allow to splutter
  • Add channa dhal, urad dhal, fry until golden
  • Add fresh curry leaves, fry well
  • Add beans, carrot little by little and stir well
  • Add turmeric powder, salt, sprinkle little water (50ml)
  • Cook closed in low flame for 10min or until beans, carrot are tender
  • Grind green chili, coconut, ginger coarsely
  • Add the above ground paste, mix well
  • Serve hot with rice
