Japanese Chahan

Ingredients

  • Japanese Rice, cooked -2cup
  • Egg – 3nos
  • Carrot, diced – 100gm
  • Onion, diced – 3tbsp
  • Spring Onion, chopped – 3~4tbsp
  • Red Capsicum, diced – 2tbsp
  • Yellow Capsicum, diced – 2tbsp
  • Cabbage, chopped – 4~5tbsp
  • Green peas – 2tbsp
  • Soy Sauce – 2tbsp
  • Cooking Wine – 2tbsp
  • Salt – 2tsp (adjust to your taste)
  • Black Pepper, powdered – 2tsp
  • Olive oil -2~3tbsp

Method

  • Heat little oil in a pan (wok is apt)
  • Add onion, sauté well until edges are fried
  • Add carrot, peas, sauté well until soft
  • Add red capsicum, yellow capsicum, cabbage, sprinkle little salt, mix
  • Fry for couple of minutes
  • Keep the fried vegetables aside
  • Heat rest of oil
  • Add egg – allow the white yolk to fry a little without breaking yellow yolk
  • Add rice, fry it along with the yellow yolk
  • Add soy sauce, cooking wine, mix well
  • Add rest of salt, black pepper, fried vegetables, spring onion, mix well
  • Fry well for 2~3min in high flame
  • Serve hot
