Manithakkali Sambar

Ingredients

  • Raw Manithakkali – 1cup
  • Thoor dhal – 1cup
  • Coriander seeds – 3tsp
  • Channa dhal – 2tsp
  • Dry Red Chili – 6nos
  • Fenugreek seeds – 1tsp
  • Tomato, cut – 1nos
  • Tamarind, extract – 2cup
  • Fresh Coconut, grated – 2tbsp
  • Turmeric powder – 1tsp
  • Cinnamon – 1inch piece
  • Cardamom – 2nos
  • Curry leaves – 1bunch
  • Coriander leaves, chopped – 1bunch
  • Mustard seeds – ½tsp
  • Oil – 2tsp
  • Salt – 1tsp (adjust to your taste)
  • Asafoetida – 1pinch

Method

  • Cook thoor dhal and turmeric powder with extra water and keep them aside
  • Fry channa dhal, dry red chili, coriander seed, fenugreek seeds, cinnamon, cardamom
  • Grind this mixture with tomato and coconut
  • Fry manithakkali in a pan for few minutes, and cook this in the thoor dhal water with salt
  • After it is cooked, add tamarind extract and cook for few minutes
  • Add the ground masala
  • After this is cooked add the cooked thoor dhal
  • Heat little oil in a pan, splutter mustard, curry leaves, asafoetida and add this to the sambar
  • Garnish with coriander
