Mushroom Creamy Soup

Ingredients

  • Mushroom, chopped – 250gm
  • Garlic, minced – 3pods
  • Onion, minced – 1nos
  • Olive oil – 1tsp
  • Celery leaves, chopped – 2tbsp
  • Pepper, freshly ground – 1tsp
  • Salt – 1tsp
  • Fresh Cream – 100ml
  • Vegetable broth – 500ml

Method

  • Heat oil in a pan
  • Add mushroom, cook closed for 5min
  • Reserve a little for garnishing
  • Add garlic, onion, cook closed for 5min
  • Grind the above into fine paste, sieve if required
  • Add vegetable broth, salt, bring to a boil
  • Add fresh cream, simmer for 10min
  • Add pepper, mix well
  • Garnish with celery leaf, reserved mushroom
  • Serve hot
