Potato Podimas

Ingredients

  • Potato, boiled, peeled n smashed – 500gm
  • Ginger, paste – 1tsp
  • Green Chili – 2~3nos (adjust to your spice level)
  • Fresh Curry leaves – 1bunch
  • Mustard seeds – 1tsp
  • Channa Dhal – 1tsp
  • Oil – 2tbsp
  • Asafoetida – 1pinch
  • Turmeric powder – 1tsp
  • Salt – 1tsp (adjust to your taste)
  • Fresh Coriander leaves – 1bunch
  • Cashew nuts/Peanuts – 15~20nos (optional)

Method

  • Heat oil in a pan
  • Add mustard, allow it to splutter
  • Add channa dhal, fry well until golden brown
  • Add curry leaves, asafoetida, green chili, ginger paste, fry well
  • Add cashew nuts or peanuts, fry well
  • Add smashed potato, salt, mix well
  • Garnish with coriander leaves
  • Serve hot with rice and sambar
