Spicy Spinach Muffins

Ingredients

  • All-Purpose Flour – 2cup
  • Spinach, chopped – 2tbsp
  • Capsicum, chopped – 2tbsp
  • Onion, chopped – 2tbsp
  • Baking Soda – 1gm
  • Baking Powder – 1gm
  • Yogurt – 1cup
  • Egg – 2nos (optional – if you need eggless no need to add egg – alternately add some activated yeast)
  • Salt – 1tsp (adjust to your taste)
  • Olive Oil – 2tbsp
  • Cheese, grated – 50gm
  • Fresh Coriander Leaves, chopped – 1bunch
  • Cherry Tomatoes, cut – 4~5nos

Method

  • Mix all-purpose flour, spinach, capsicum, onion, yogurt, egg, little coriander leaves, salt, mix well
  • Finally, add baking soda, baking powder, mix well
  • Grease muffin base with olive oil
  • Fill in muffin base up to ¾ᵗʰ level
  • Sprinkle a little cheese over the muffins
  • Pre-heat oven to 180°C
  • Bake it for 25~30min
  • Allow it rest for 5min
  • Garnish with remaining coriander leave, cut cherry tomatoes
  • Serve hot with ketchup or hot sauce
