Stuffed (Leftover) Rice

Ingredients

  • Bell Pepper, cut into half – 2nos
  • Left over Rice – 1cup
  • Onion, chopped – 1nos
  • Garlic, chopped – 3nos
  • Green Chili, chopped – 1tsp
  • Fresh Curry leaves – 1bunch
  • Pumpkin seeds, peeled n crushed – 2tbsp
  • Cashew nuts, crushed – 1tbsp
  • Olive oil – 4tbsp
  • All spice powder – 1tsp
  • Garam Masala powder – 1tsp
  • Salt – 1tsp

Method

  • Heat oil in a pan
  • Add garlic, sauté well
  • Add onion, sauté well
  • Add green chili, curry leaves, fry well
  • Add pumpkin seeds, cashew nuts, all spice, garam masala, salt, mix well
  • Finally add left over rice, mix well
  • Pre-heat oven to 200°C
  • Grease bell pepper with olive oil
  • Fill the rice mix tightly
  • Wrap with aluminium foil, bake for 20min
  • Remove aluminium foil, bake for another 15~20min
  • Serve hot
