Sweet n Sour Pumpkin

Ingredients

  • Pumpkin, peeled and cut – 400gm
  • Cumin – 1tsp
  • Roasted Cumin, powdered – 1tsp
  • Roasted Black Pepper, powdered – 1tsp
  • Amchur – 1tsp (increase quantity if you like more sourness)
  • Cooking Oil – 1tbsp
  • Sugar – 2tsp
  • Salt – 1tsp
  • Coriander leaves – 1bunch

Method

  • Heat oil in a pan
  • Crackle cumin
  • Add cut pumpkin, salt, sugar, mix well
  • Close and simmer until pumpkins are softened – do not add water as far as possible – pumpkin must cook from its own water content
  • Add amchur, cumin, pepper powder, mix well
  • Garnish with coriander
  • Serve hot along with roti
