Thiruvathirai Kootu

Ingredients

  • Yam – 50gm
  • Potato – 50gm
  • Chinese Potato (Koorkai) – 50gm
  • Sweet Potato – 50gm
  • Raw Banana – 50gm
  • Snake gourd – 50gm
  • Ash gourd – 50gm
  • Pumpkin – 50gm
  • Carrot – 50gm
  • Broad Beans (Avarai) – 50gm
  • French Beans – 50gm
  • Drumstick – 1nos
  • Green Peas – 25gm
  • Field beans (Mochai) – 25gm
  • Green Chilli – 10~15nos
  • Fresh Coconut, grated – ½nos
  • Fresh Curry leaves – 1bunch
  • Turmeric powder – 1tsp (optional)
  • Coconut Oil – 2tbsp
  • Mustard seeds – 1tsp
  • Urad Dhal – 1tsp
  • Asafoetida – 1pinch
  • Salt – 1½tsp (adjust to your taste)

Method

  • Wash and cut all the vegetables and cut into 1inch pieces
  • Cook all vegetables together except drumstick, just use enough water the gravy should neither too dry nor too liquid
  • Cook drumstick separately, as this will break and lose its structure if cooked with other vegetables
  • Mean while grind coconut and green chilli in to fine paste
  • Once all vegetables are cooked add the coconut, green chilli paste, turmeric powder, salt
  • Mix well and cook for 3~5min
  • Heat oil in a pan
  • Temper mustard, urad dhal, curry leaves
  • Pour that into the gravy
  • Serve hot with Thiruvathira Kali
