Tomato Rice

Ingredients

  • Rice, cooked – 2cup
  • Tomato, diced – 3nos
  • Onion, finely chopped – 2nos
  • Garlic, finely chopped – 5nos
  • Ginger, finely chopped – 1inch piece
  • Green Chili – 2nos
  • Sambar Powder – 2tbsp
  • Mustard – 1tsp
  • Turmeric powder – 1tsp
  • Salt – 1tsp (adjust to your taste)
  • Asafoetida – 1pinch
  • Oil – 2tbsp
  • Fresh Curry leaves – 1bunch
  • Fresh Coriander leaves – 1bunch
  • Cashew Nuts, roasted in ghee – 10nos (optional)

Method

  • Heat oil in a pan
  • Temper mustard in it
  • Add green chili, curry leaves and fry well
  • Add onion and sauté well until raw smell vanishes
  • Add garlic and ginger sauté well until golden brown
  • Add turmeric powder, asafoetida, sambar powder and mix well
  • Add tomato and sauté well until mushy
  • Add cooked rice and mix well and cook in low flame for 2~3min
  • Garnish with coriander leaves, roasted cashew nuts
  • Serve hot with potato fry curry
